Austrian Raspberry Shortbread

I was patiently waiting to make my first bar cookie since I just love every one of them. Austrian Raspberry Shortbread, just love that name, calls for the dough to be frozen and then grated in a food processor. Whoa put on the brakes….did I read that correctly? Grate frozen dough??? Well, the recipe also offers it to be grated by hand in the absence of a food processor. That sounds like…work! So I put my trust in my like new food processor hoping it could handle this job.

So last night I mixed my dough together sampling it way too many times. This just attests to the deliciousness of it! I rolled the dough into two long logs, wrapped them and put them to sleep in the freezer overnight.

Today, I put my food processor to the test and it didn’t disappoint! It just flew through the frozen dough grating it into small soft pieces that didn’t appear frozen at all. That goes into the bottom of a 9x13 pan, spread with raspberry jam (I was very generous) and top with the rest of the grated dough. Pop in the oven and forget about it for 45 minutes. Sprinkle with confectioners’ sugar as is comes out of the oven.

This recipe is another testament that simply just reading a recipe can seem overwhelming and perhaps get skipped over; however, when the baking process is broken down into a couple of steps, over a day or two, then it really becomes quite simple. The proper kitchen tools are also essential in making the baking process successful without much effort and tremendous results! I truly feel like a baker now and am very pleased that I had the opportunity to try such recipes. I will be bringing this recipe to many future gatherings. Funny how something I thought I would have never attempted now has plans to be baked over and over again.

  1. Phoebe, your reaction was the same as mine: What? Grate frozen dough??? When you've got a machine to do the work, turns out that it's a piece of cake. I got a new food processor just for this job alone! My old one failed me with this recipe(and my arms were getting tired from using the box grater), so last time I used Sharon's processor. Good tools are essential. Your elegant picture shows how delicious this cookie really is.

    I have to share this with all of you. Thursday I baked 72 dozen cookies so I felt like I was right in the thick of things, just like you. Got a nice order from a law firm for 35 of our books and lots of cookies to go with it for Administrative Professionals Day next week. An all day project (and night), but it was fun, fun, fun! My kitchen is almost back to normal. So tonight I went to the bar with my sister to celebrate my one day job and her raise! She out-drank me and beat me in darts, but it's always fun to be with my crazy sister.

    This baking venture will be over in less than 2 weeks and we are all going to celebrate your success! Theresa G.

  2. Phoebe, I made this recipe once and took the skin off of my thumb with the box grater and decided the food processor might be a good idea. Thank goodness for great tools. I think this is a great cookie also. Loved your picture. L. Sharon

  3. Thank you so much for the wonderful treats yesterday. I have to say I must have had four throughout the day. I may try this one. Raspberry is one of my favorite flavors.

  5. Thanks, Danielle. I made chocolate crackles and lemon thins. The girl who placed the order is decorating baskets and filling them with the book, cookies and other goodies provided by the firm. Baskets will be distributed throughout the office on Monday. I'm looking forward to seeing a picture of the final product. Hope they like it! Theresa G.
