Bishops Bread

We left the cottage this
afternoon about 1:00 and I already had had a full day. The cottage needed some t.l.c. since I had not been there in 7 months. So yesterday we put the boat in the water and spent the next four hours doing yard work(happily because it was 70 degrees and beautiful) This morning we got up and I started spring cleaning the bottom floor of the cottage. Bathroom, family room, and kitchen. We hit the road and drove home. I did not feel like going to the grocery store for ingredients and then baking. I knew I had to persevere. So after a quick shower off to the store I went. This is a more expensive cookie because of all of the different ingredients which are awesome. I knew from reading the recipe it was going to be very flavorful and it is. It has Maraschino cherries, walnuts, sweet German chocolate and dates. I did not have exactly 2 cups of dates so I added about a 1/4 cup of raisins to fill in. I also realized as I was mixing that I used 2cups of cherries when the recipe only called for 1&1/2 cups. Thank goodness it did not do anything horrible. When it was mixing it did have the consistency of bread dough. I was worried that I was going to have spillage on my jelly roll pan, but I did not. It firmed up nicely and stayed a thicker consistency as you can see from the picture. They are a very tasty cookie with wonderful strong flavors.   2. Gotta give you credit Danielle for your perseverence in this baking process especially after a busy weekend of cleaning and traveling! I would have wanted to get home and crash let alone start shopping and baking.

    Pictures look great. Clever idea to add extra raisins for the date shortage. Never hurts to add a few more cherries either. Out of curiosity, how do the boys like them? I've always thought these had more appeal to adults than children. Another job well done. Theresa G.

  3. Theresa, I had extra raisins from another recipe and since the consistency seemed similiar I thought they would be a good substitute. Had I realized sooner my cherry error I probably would have skipped adding raisins. As for the boys, they love them, chocolate, nuts, and cherries....Yum. We'll have to see what the other girls kids think of them when they get them today. Off to deliver.

  5. You blew me out of the water when I found out you baked as soon as you arrived home and were also going to deal with our Science Olympiad practice we slid in at the same time. Thank you for being so understanding for the practice that didn't happen.

    After our baking experience, I have come to realize that I am a 'bar cookie' girl. Every bar cookie has rated first class with me. I give this one an A+! My kids really like them too, especially the one who makes all the cherries disappear in our home.
